Mango season is amongst us and my husband and I were wanting something creamy and tropical to set the tone for the day.
Mango A-Go-Go is my idea of a traditional Indian Mango Lassi created into a chia pudding!

Gimme Some of that Cardamom!

Now that you know how brilliant cardamom is and a delicious recipe that features it, there's no reason to not make it happen! Get to it folks and don't forget to snap a shot and hashtag so I can be inspired by you too!

Serves 2-3
Ingredients:
1c coconut yogurt or raw grass fed kefir
1/4c frozen mango
1tbsp local raw honey or 2tbsp maple syrup
1-2 pinch cardamom
1 tsp rose water
1 handful pistachios
1 fresh ripe mango (my fav is champagne mango)
Blend frozen mango, yogurt, honey, rosewater and cardamom. Mix half of the chia and set to chill in the fridge for 30 minutes along with the remaining mix.
Grab 2 glasses pour 1/2 of the chia mix at the bottom of each glass. Layer with fresh cubed mango. Add another layer of pistachio. Pour the remaining lassi mix on top. Now top with more fresh mango and pistachio!
