Peanut Butter Creme Pie

Today is the day I wed my best friend, Daniel Quinones, just seven years ago!  They say if you want to be sanctified the quickest way is to get married.  And ever since that day I have continued to die a thousands deaths to my selfish ways.  Well this leads me into sharing this wonderful raw vegan celebration pie in honor of God's perfect design we call marriage and whole foods!  So let's get to celebrating!!!

...and believe me, its simple!  



And since it's mostly  raw vegan, it is chalked FULL of enzymes!

This pie has all the best textures!  The bottom is like a gooey brownie laced with crunchy walnuts, a layer of chunky peanut butter just underneath ANOTHER rich layer of creamy honey whipped peanut butter.  And to top it off?  The silkiest most smoothest layer of vanilla coconut cream!  



Hope you enjoy this as much as I did scarfing down a whole half of it!  Don't worry, the pie is only 4 inches wide AND it's full of nutrition so there's nothing to regret!

Sharing Size 2-4

Here's what you'll need...

a 4 inch spring form pan

a blender

Ingredients:

Bottom Layer

1/4 soaked walnuts

1/4c soaked dates

1tbsp cacao powder

2nd layer

2tbsp crunchy pb

3rd layer

1 can coconut cream

1 tbsp raw local honey

1/2c soaked raw cashews

1 tbsp peanut butter

4th layer

1 can coconut cream

1 tbsp maple syrup

1/2c soaked raw cashews

1/2 vanilla bean caviar

Blend bottom layer.  Pros into 4 inch spring form pan.  Set aside in freezer to chill.

Blend together all of 3rd layer ingredients.  Take out bottom layer and spread 2nd layer on top.  Pour on 3rd layer.  Set aside in fridge.

Blend 4th layer ingredients and pour on top.  Set aside in fridge for 1 hour before serving time.  

Dress it up with some cacao bar crumbles, lashings of peanut butter and/or cacao powder.
